If you ask me, sweet potatoes and avocado is the perfect combination. Eat this dish as a simple lunch or snack.
Sweet potatoes (As many as you can eat)
1,5 tbsp. white wine vinegar or lemon juice
1 tsp. mustard (I prefer Dijon mustard)
½ tsp. garlic powder
1,5 oz / ½ dl soy milk
How it’s done:
Cut the sweet potatoes like hasselback potatoes. Put them i foil and bake them in the oven on 400 F / 200 C for 40 minutes or until they are soft in the middle.
Take the potatoes out and let them cool down. While they cool down, make the mayo by blending the mayo ingredients with a hand blender.
Serve the dish as shown on the photo.
