An easy snack to go ! That’s it.

While I was at the Reducetarian Summit, I picked up a few samples of a fruit bar from the brand: That’s it.

It was basically just dried fruit and nothing else, and we all know how I feel about fruit, right? The more the better ! Fruit is the most natural energy source with the easiest accessible glucose! It will fuel you right up with energy, happiness and rainbows!

(Since this isn’t a paid ad, I can’t offer any discounts, I just enjoyed the product).

3 awesome places to eat healthy in Miami South Beach.

Someone told me that there aren’t many plant-based restaurants in Miami. However, while I was in Miami South Beach,  I ate different places at every single meal, and I NEVER had to go very fare away from my hotel. There were definitely an abundance of options to eat a healthy plant-based meal, so don’t be afraid to go hungry in Miami.

Juice and Java

The first place I wanna show you is Juice and Java. It isn’t a completely plant-based place, but there are many plant-based options and they very all labeled as vegan.

I had a green tofu salad with a sour tahini dressing. It was light but filling. On the side I had a 24 oz. veggie juice. I highly recommend this place for a quick simple lunch!

 Planta

I was very exited to step in to this place. I just wanted to find the nearest restaurant on happy cow, and this was it. As it turned out it was a trendy plant-based gourmet restaurant / cocktail bar.

I had the kelp noodle caesar salad. It was so AMAZING and flavorful that my mouth was exploding in taste impressions and I could hardly finish it. I know it sound weird that something can taste SO good that you can barely eat it, but as a highly sensitive being I feel every impression I get very deeply, which I think is one of my biggest strengths. But I will write about this in another post. This post is about how AMAZING the food was.

It really was.. But moving on 😀

Full Bloom

This is another plant-based gourmet restaurant nearby our hotel. I was amazed by all the plant-based options out there. My boyfriend and I agreed that this was our favorite place. The food was incredible (without over-stimulating my taste buds), and besides the obvious gluten-free label which most restaurant carries, they also labelled the OIL-FREE meals, which I found very appealing. So in this place, your actually able to order an amazing plant-based oil-free lunch or dinner. If you visit the place with a meat-eating friend or someone who prefers greasy delicious vegan options, they do offer the impossible burger and the beyond burger with a side of fries on their menu.

This was my main course. I also had rice paper rolls and a delicious gluten-free chocolate cake. I don’t recall the name of my main course but it’s jackfruit in an AMAZING and creamy tomato sauce on top of brown rice and quinoa. As mentioned, the food is amazing, and the waiters were attentive, nice and polite. I highly recommend that you eat here.

I hope you find this guide useful, if you one day find yourself in Miami South Beach. <3

3 simple but amazing smoothies to kickstart your healthy morning!

Smoothies are a great way to start the morning. It’s feels amazing to finish a large smoothie. They can be very filling, they are easy to make and easy to bring with you.

Greenie with mango and spinach

This is the one to pick if you want to sneak some extra greens into your diet. You get a beautiful color, a sweet taste and extra nutrition because of the spinach. Although the smoothie is sweet and delicious, it’s not nearly as sweet as a pure fruit smoothies because the greens balance it out. This smoothie is perfect if you prefer a less sweet taste.

Ingredients:

3 ripe bananas

100g frozen mango

1 handful of spinach

0,8 cup / 2 dl water (You can adjust the amount of water if you like it thinner or thicker than the recipe suggests)

How it’s done:

Blend all the ingredients in a blender until it’s completely smooth. Eat it right away or bring it with you.

Banana strawberry

This is a very classic combination, but still very delicious.

Ingredients:

3 ripe bananas

100g strawberries

0,8 cup / 2 dl water (You can adjust the amount of water if you like it thinner or thicker than the recipe suggests)

How it’s done:

Blend all the ingredients until you have a smooth consistency.

Yellow Exotic

Exotic fruit isn’t cheap all over the world, but luckily you can find them frozen almost anywhere. The combination of frozen and fresh fruit makes the temperature and consistency of the smoothie delicious.

Ingredients:

3 ripe bananas

100g frozen mango

The juice of 1 orange

0,6 cup / 1,5 dl coconut milk light

How it’s done:

Put the bananas and the mango in a blender. Add the orange juice and coconut milk. Blend it until it’s completely smooth.

I hope you enjoy these recipes.

Katrine.

Failure doesn’t exist.

Do you feel like a failure whenever you don’t comply with a diet, and fall into old habits? You are not the first one this happened to.  I want you to be open to the idea that you haven’t failed yet, and that you are not spine less. Replace the world “failure” with “experience”. Suddenly you are one experience richer and you have the opportunity to learn something valuable about yourself. Sometimes you need to learn the same lesson more than once. That’s okay, because it’s all a part of your journey. Of course, it’s not as simple as it sounds. You need to be tuned in to this mindset, before you can view your “failure” in this light, and you need to be aware that this perspective exists. In this article I will tell you my point of view on failure.

Just like your meals, it’s all about abundance! You become abundant in experience so to speak.

When a baby learns to walk the baby will fall a million times before the baby masters it. This happens because the baby doesn’t know exactly how and hasn’t yet mastered the technique and balance. But eventually the baby will grow up and walk completely untroubled, not even realizing that walking is a skill that needs to be practiced. The baby simply gained experience by falling and trying again, until the baby mastered it.

The older we get the more abundant we are in experience. It’s the same thing with lifestyle change. One step at the time, fall and then and try again. It’s all a part of the journey.

When you fall back into old habits, it’s likely that something didn’t work for you. Maybe you´re making to complicated and time-consuming meals relative to the microwave dinners you made before. The lesson in this situation is that you don’t like to cook or don’t have time to cook, and you need to find something that comply with this. It’s important to become aware of your current habits, and make choices that comply with your current lifestyle.

Then there’s other and more complicated experiences, like when you figure out that the healthy food doesn’t numb you or feels as good to eat as the old food you used to enjoy. This is complicated. Your motivation to overcome this will come and go, and it’s important to celebrate the victories. Every time you succeed you become more abundant in success and you have the opportunity to become aware of what works for you. Every time you don’t succeed you become more abundant in valuable learning experiences about what doesn’t work for you. Either way, you win because you are moving forward. Forgive yourself and move on to the next meal.

Love,

Katrine.

3 very common mistakes people make when they change lifestyle, and how to overcome them

I have been interested in health and helping people become the healthiest and most vibrant versions of themselves in a long time. Over this time, I have observed many ways people can sabotage themselves from reaching their goal. In this article I mention 3 ways to sabotage yourself and what to do about it.

1: Starting out with a strategy and believing that this is the only strategy to achieve your goal.

Problem:

This way of thinking is not very flexible. Your lifestyle change must fit into your current life. Not the other way around.

Solution:

When you have lived a certain lifestyle for a long time, this lifestyle is what you are good at. Learning completely new things takes time. Think about how many times a baby has to try walking before he succeeds. The baby has to learn from his or her mistakes and try repeatedly before it happens. When you try a new lifestyle, you have no idea what you are doing either, and you have to adjust your strategy along the way. Maybe you wanted to get up every morning to make a delicious fruit salad, but as it turns out you prefer the extra time in bed, and you can buy a great smoothie on your way to work.

2: You don’t pick the food you enjoy.

Problem:

If you don’t enjoy your meals, you will become demotivated.

Solution:

What foods you enjoy will probably change along the way as you taste buds adapt. But until then, it’s okay to try low-fat plant-based versions of your old favorite meals. Maybe you’ll enjoy a plant-based burger with veggie sticks instead of fries. You don’t have to begin with eating salads everyday if you don’t want to. It’s important not to feel restricted. Your diet is a choice and you make the rules.

3: You quit because you don’t lose weight fast enough.

Problem:

Your focus is on the results and not the process.

Solution:

The result is important, but you can only live in the moment. You need to figure out how to reach your goal. You didn’t gain weight overnight, and you won’t lose weight overnight either. As I already mentioned, you need to learn from your mistakes and try new strategies. You might not lose weight as fast as you hoped for, but it’s more important that your being mindful about what you like to eat, how the food affects your body, what works for you and what doesn’t. You will be better of with a slow weight loss than losing 1,5kg / 3,3 pounds a week for 2 weeks, and then gain them back on because the change was to over whelming.

Self-sabotage and failures are something I feel very strongly about. I believe that we all create our own reality through our thoughts, and thoughts can be changed, and therefore you can begin to cheer yourself on instead of putting yourself down. I will write more about this topic in other articles.

Katrine
